Single Estate — Japan

Single-estate yuzu from the mountains of Japan

One farm. One grower. Around 20 tonnes of yuzu in a typical year — green in late summer, gold through the winter.

Groves of Golden Yuzu filling a mountain valley under daylight.

What sets us apart

Single estate

Every fruit comes from our own groves. No blending, no aggregation — one farm you can name and visit.

Three seasons, named

Green Yuzu in August and September, October Yuzu, Golden Yuzu from November to late January. Order by name — and we tell you which of the three is coloured after picking.

One pair of hands

Every fruit is graded by the grower, two to three days after picking, so that thorn damage has time to show.

The Farm

Grown by the person who answers your questions

Phoenix Garden Yuzu is a single farm in the mountains of Japan, worked by a first-generation grower — around 20 tonnes of yuzu in a typical year. The growing is done by one person. The grower's family help with the cartons, friends come for the harvest, and every fruit is graded by the person who grew it.

When a chef asks how a lot was grown, the person answering is the person who grew it.

Three seasons of fresh yuzu, and one idea

Green Yuzu, October Yuzu and Golden Yuzu — each picked in its own season, rested, graded by the grower and packed on the farm. A pressed juice is in planning — not yet produced. Each card says plainly how the fruit was handled after picking.

Green Yuzu on the branch

Green Yuzu

August – September

Sharp, green citrus aroma with a cool, herbal edge — the fragrance of the fruit before it ripens.

Zested over sashimi and grilled fish, infused into oils, or worked into dressings where a bright, cutting aroma is wanted.

Picked green, shipped green. No post-harvest treatment.

A crate of October Yuzu after degreening, the skins turned gold

October Yuzu

October

Green-stage fruit with a gold skin. The treatment changes the colour of the peel and nothing else — the aroma, the acidity and the juice are those of October fruit, not of winter fruit.

For kitchens that want a gold-skinned yuzu in October, before the winter crop begins in November.

Picked green, then degreened after harvest: two to three days in a controlled room with ethylene. This is the standard method in Kochi.

Fully ripe Golden Yuzu

Golden Yuzu

November – late January

Fully ripe: a deep, floral citrus aroma with the warmth that defines yuzu at its peak.

Zest, juice and peel for sauces, desserts, ponzu and citrus curds through the winter season.

Coloured on the tree by the cold of a Kochi winter. No post-harvest treatment.

Harvested yuzu in crates, waiting to be pressed

In planning — not yet produced

100% Pure Yuzu Juice

If it is made, it would be pressed from our own fruit by a partner facility in Japan — 100% juice, no sugar, no additives.

Quantity, pack size and timing are not settled. Tell us if it would matter to your kitchen.

Quality & Freshness

What we say is what we do

Rested, then graded by hand

Fruit rests two to three days before packing, so that thorn damage has time to show. The grower grades every fruit, one by one.

Told plainly

One of our three fresh products is coloured after picking. We set all three side by side and say which.

Labelled by hand

Every carton leaves with the producer's name, address, telephone number and product name, and the shipping date written on the box by the grower.
